I plan to check out one of his restaurants in NYC this November. ~Perhaps Union Square Cafe.
Mr. Meyer seems like a very decent and honorable fellow.

Always inspiring and heartfelt to see two successful human beings engage in the pleasurable discussion of food+drink+hospitality. When visiting NY or simply thinking about the City, Union Square Cafe is always on my mind. I enjoyed a solo dinner there in October 2009, and it is absolutely a dining spot where you can go alone but not feel alone because the staffers' HQ ("Hospitality Quotient") is genuine and together, customer and server, create indelible memories. I was even presented with a Union Square t-shirt designed by Danny's relative, Polsky, as a parting gift. I have had many happy times through the years. Looking forward to my next visit. Till then, all the very best Charlie and Danny.

At the beginning of this interview one thought that it was just going to be another Restaurant Owner/Chef story and as such one started to doze off. However what snapped ones head back and got ones immediate attention was not what the guest said but the question Mr Rose asked. That question was what are the factors that go into making a restaurant a success. That question was totally nuanced to elicit a thoughtfull response that would be illuminating. So while the guest was enjoyable to listen to as he is a real down to earth thoughtfull kind O guy..it was Charlie Rose dancing at the top of his form that was not only the most important aspect of the interview but also entertaining to watch.
Maybe one wasn't paying attention before but one now knows that one of the most important things or passions/pleasures in Mr Roses life is dining out. That ambience of enjoying the company of friends while having a fine meal. That Mr Rose is probably the one thing you would miss the most in this life.

Tabla closed after 12 years.
It was an Indian restaurant with 283 seats but it would have survived with 183 seats.
So move the restaurant or tell us the rest of the story.

YES! Happy to see you as a human being not that you are lucky to be there.
YES! Emotional skills as a high Hospitality Quotient—make other people feel better.
YES! Doctors, but mostly the front office staff, really stink on the Hospitality Quotient because they don’t have the time and who is really happy to see a sick person:

For me a good restaurant serves food that makes me feel good after I eat it. No bloating, no lethargy, no stomach ache, no diarrhea, no vomiting.
I find the salad bar at Jason's Deli does this and I would say it has the top salad bar in America (love those gingerbread muffins!).
I also feel good when I have things when I want them not when the Server feels like giving them to me. So I look to serve myself and keep the control and save the tip.
Charlie, as we have heard from the table: "Food is medicine". So the restaurant better be a good pharmacy or I have no interest in it.
