Anomalous tho it may seem, I tend to think of Jacques Pepin like John Madden, at the top of their respective professions, yet always unpretentious and thoroughly enjoyable, altho I have no idea what Mr Pepin may think of Turduckens. They both understand the importance of fundamentals and appreciate the necessary imprecision of the game, whether it's about recipes or set plays. Among my first cookbook acquisitions were Craig Claiborne's Times compilation, Julia Child, et al's pedantic affair, and James Beard's, which was hand's down both the simplest and most useful, but none of them taught me how to cook. While I'm glad to hear the produce has improved in Manhattan mkts from several decades ago, I bet the prices haven't.
