The problem here is, as was said, agri-business, which industrializes farming, creating the poor "public health" conditions for the animals with the consequent rise in pathogens. On the sales side, the big problem is in uncooked prepared stuff, such as factory-ground beef, and salad packs. But I don't think anyone mentioned that feeding the animals antibiotics makes the mutation problem that much worse. One of my pet peeves is the use of tenderizers and hormones on the feed lots. Hormones add water to the meat so that it can't be properly cooked, and, indeed, is a sort of fraud, and the tenderizers tenderize our insides, as well as the animal's.
